Selenium and vitamin E protect polyunsaturated fatty acids (structural components of biological membranes) from the destructive effects of peroxides and free radicals. Deficiency of vitamin E and selenium leads to disorders of the locomotor apparatus, damage to the heart muscle, skeletal muscles, causes dystrophy and myopathy. In calves and lambs, dystrophic muscle changes lead to white meat. Damage to the heart muscle can cause sudden death (dead heart disease). Skeletal muscle degeneration leads to banana disease in pigs, for example. In poultry, vitamin E and selenium deficiency is the cause of brain thinning (encephalomalacia), exudative diathesis (increase in blood vessel permeability) and vitreous muscle degeneration.
